1 cup of olive oil

2 cups of semolina

3 cups of sugar

4 cups of water

4 tsp ground cinnamon

1 orange

200gr glazed cherries


Heat the olive oil in a pan, once is hot enough add the semolina to brown.

Follow by adding the sugar, stir so it's mixed with the semolina and pour the water carefully.

At this point you need to add the cinnamon, the juice of the orange and the glazed cherries sliced in half.

Leave it to boil until all the water is evaporated. The mixture is ready when is thick enough and starts bubbling.

Pour the mixture into a deep tray and leave it in the fridge for 2-4 hours.

Once it's ready place the halva onto a big plate and sprinkle with cinnamon.


Instead of cherries you can use raisins and nuts. It's also great if you serve it with vanilla ice cream.
