Episode 9 - Greek Burgers with Roast PotatoesIngredients

1kg mince beef

1 courgette

1 tomato

1 red pepper

½ potato

1 egg

1 onion

½ cup of breadcrumbs


Garlic powder, smoked paprika, salt, pepper

For the potatoes:

4 potatoes

2 tomatoes

1 vegetable stock cube

½ cup of olive oil

Salt, pepper, smoked paprika


Chop the onion, the red pepper and the parsley finely

Grate the potato, the courgette and the tomato

In a big bowl add the mince beef and all the vegetables. Follow by adding the rest of the ingredients and work the mixture with your hands.

Put it in the fridge until you prepare the potatoes, this way it’ll get firmer.

Cut the potatoes in nice big pieces and put them in a big baking tray.

Grate the tomatoes and dissolve the stock cube in a cup of hot water. Mix them together in a bowl and follow by adding the olive oil.

Pour the sauce on top of the potatoes and add seasoning and spices.

Prepare the burgers and place them in the tray with the potatoes

Roast in a preheat oven at 200 for an hour.


Homemade Tzatziki


500gr Greek yogurt

3-4 cloves of garlic

1 cucumber

1 tsp salt

1 tbsp vinegar

¾ cup of olive oil


Chop the garlic, place it in the pestle mortar with the salt to create a nice paste.

Don’t peel the cucumber. Cut it in half and then cut again each half lengthwise.

Using a spoon, scoop the seeds of each quarter. Grate the cucumber, let it strain and squeeze any excess juice out.

Mix the yogurt with the cucumber and follow by adding the garlic paste, vinegar, olive oil and stir well.


We don’t peel the cucumber because the skin has all the vitamins and it gives this nice colour to the tzatziki as well. We scoop the seeds from the cucumber because in this way we make sure our tzatziki is less watery.
