Episode 8 - Green Beans with Tomato Sauce and Traditional Feta Cheese BreadIngredients

1kg green beans

2 onions

2 carrots

2 cloves of garlic

3-4 medium potatoes

400gr chopped tomatoes ( fresh or can )

1 vegetable stock cube

Pepper, paprika, parsley, oregano

Olive oil

For the feta cheese bread:

500gr self-raising flour

500gr Greek style yogurt

4 eggs

1 cup of olive oil

500gr feta cheese

Salt, pepper

Method

Place all the bread ingredients, apart from the feta cheese and the flour, in a big bowl and mix them using a whisk.

Pour the flour gradually and mix it using your hands instead of the whisk at this stage because it will be a lot stickier for it.

Cut the feta piece in chunks and add it in the batter. Mix gently so you don’t mash the cheese.

Spread some olive oil in  baking tray and add the batter

Bake in a pre-heated oven at 180-200 for 40 minutes until it gets brown.

While the bread is baking, chop the onion and garlic, slice the carrots and quarter the potatoes.

In a pan heat some olive oil and add the onion and garlic. When they get soft add the potatoes and the carrots. Follow by adding the green beans, stir and pour the chopped tomatoes over them.

Stir and add as much water as needed to cover them and slightly more.

Add the stock cube, pepper, paprika, parsley and oregano. Let them all simmer till they are soft and the tomato sauce is thick.

Serve them with the feta cheese bread.

 

Sometimes we add mushrooms, chicken or diced beef. Exact same method, but before you add the green beans you will need to add the meat or mushrooms to brown them.
