Episode 7 - Bakaliaros Skordalia (Beer Battered Cod with Garlic Mash/Dip)Ingredients

4-6 cod fillets (frozen or fresh)

Sun flower oil for deep frying


For the batter:

165ml beer

165ml water

2 cups of plain flour

For the Skordalia(Garlic Mash):

3-4 large potatoes

6 cloves of garlic

2 tbsp olive oil

2tbsp fresh butter

1tbsp white vinegar


Salt and pepper


In a bowl mix the beer and the water. Add the flour gradually, while using a whisk, until it gets thick.

Mix the cod fillets with flour first and then with the batter.

Heat the oil in a deep pan and fry the cod in batches until it gets golden brown.

Peel the potatoes, cut them in small pieces and boil them.

In a small sauce pan pour some milk and when it starts boiling add the cloves of garlic for 30 seconds. In this way you will take down the intense smell of it.

Mash the potatoes with a fork and add the fresh butter while they are still hot.

In a blender add the cloves of garlic, the olive oil, the vinegar and blend to a paste. Add to the mash potatoes and season with salt and pepper.

Serve the battered fried cod with the garlic mash and lemon.


You can add walnuts to the garlic mash if you like, just add them to the blender with the other ingredients.

Be careful while boiling the garlic in the milk. If you boil it more than the suggested time it will completely take the taste of it.
